Green Sauce


I’ve been making this sauce consistently for a few months now and it has proven to be extremely versatile. I’ve used it with Central American, Middle Eastern, and even Korean dishes and it gets the job done. It goes very well with my Gochujang Pork Shoulder. Here it is for you to use, tweak, and enjoy:


-3/4 cup cilantro (chopped)

-2 whole scallions (chopped)

-1 small mint sprig

-3 garlic cloves

-1/2 lime (juiced)

-1 cup sour cream

-kosher salt (heavy pinch)

-coarse black pepper (small pinch)

Combine all ingredients in a food processor or blender, and blend until smooth. Adjust salt as needed.
